Chapter 64 Special Supply of Soybeans (for Sanjiang Tickets)

Although Chen Qing's family is not rich, he is indeed a very upright person. If there was nothing holding him back, it would be absolutely impossible for him to take advantage of Han Kongque.

After Han Peacock discovered the differences in the Dream of Red Mansions manuscript, he started thinking about how to use the recipes on it. The recipes recorded in the Dream of Red Mansions manuscript were too detailed, so Han Peacock came up with the idea of following it.

I recorded the idea of experimenting, and the experiment got out of hand.

Over the years, Han Kongque bought a lot of things from the antique street, but in the end, all he left behind was only one incomplete unknown ancient book, which was the ancient book that recorded the transformation of jade powder, and the other one was this Red Mansion.

They were all handled by him.

The biggest difference between this Red Mansion and other editions is that it records a large number of recipes for making rare and delicious dishes.

The Dream of Red Mansions originally described the preparation methods of many dishes, and this Red Mansions Manuscript has detailed supplements for all the dishes involved in the Red Mansions.

It was because Han Kongque saw the special features of this Red Mansion that he sincerely collected this book.

At that time, he bought the Red Mansion manuscript for only ten yuan. After all, it was not a famous manuscript, and it was also a manuscript with pen calligraphy, so he didn't pay much attention to it and just threw it on the desk. If it wasn't

He later discovered that the manuscript was not properly protected and would soon be destroyed due to the conditions in his basement.

Fortunately, Han Kongque accidentally discovered the anomaly in this manuscript and solemnly protected it.

At that time, Han Kongque studied for a while and found that this Red Mansion manuscript was really nothing special. The recipes in it may be because the author who copied the book was a chef, so he included the recipes in the book that he knew.

The dishes involved are clearly written down.

Apart from supplementing the Red Mansion recipe book, this book is no different from other versions of Red Mansion, so after Han Peacock couldn't find anything from his research, he put it on the bookshelf and collected it.

When he thought about helping Chen Qing and his wife, he was reminded of the Dream of Red Mansions manuscript. Only then did he know the true value of the Dream of Red Mansions manuscript.

Chen Qing and his wife made snacks, and this manuscript of Dream of Red Mansions happened to record a lot of snacks. Among them, Han Kongque remembered sugar-steamed cheese, pine nuts, air-dried chestnuts, sugar-pickled rose brine, deer

Preserved meat, rice wine, shochu, lotus root powder and cinnamon sugar cake, pine and goose oil rolls.

Others are like one-inch crab-filled dumplings, melon seeds fried in chicken oil, water chestnut cakes, chicken oil rolls, butter-fried small nuts of various colors, butter-fried small peony-shaped nuts, and cleansing powder.

Snacks such as plum slices, snowflakes, candies, auspicious fruits, wishful cakes, sweet-scented osmanthus sugar steamed new chestnut flour cakes, hot cakes, amomum villosum, red water chestnuts, chicken heads, etc.

With so many snacks, no matter which one can be made, it can become a special delicacy of a small restaurant.

When he first got this manuscript of Dream of Red Mansions, Han Kongque noticed that this manuscript of Dream of Red Mansions was different from other versions, so he studied some of the recipes and snacks recorded on it, and tried to make them using the above methods.

At that time, he just discovered that the recipes recorded in this book were all real, and the food made using the above method was quite delicious.

Now he wants to help Chen Qing and his wife. Naturally, he can no longer let them sell ordinary meat buns, but wants to be unique. What kind of snacks are better than those special snacks in Dream of Red Mansions?

He just happened to have such a book, and he happened to learn something from it. Originally, he didn't pay attention to it, but he just experimented and found out that the recipes recorded in the book were all real and effective. Now that he uses it, it is naturally different.

Han Kongque has an extraordinary memory. After flipping through the book for a few minutes, he settled on the first snack, tofu skin buns.

In Dream of Red Mansions, the reason why tofu skin buns appear is Baoyu.

In that paragraph, Baoyu smiled and said: "Okay, it's too early." Yin asked Qingwen again: "I am having breakfast in that mansion today, and there is a plate of tofu skin buns. I think you like to eat them, and

Grandma Zhen said, she only said that I would save it for dinner and ask someone to bring it over, can you eat it?"

Qingwen replied that she knew Baoyu had prepared it for herself, but Baoyu's wet nurse took it away. Baoyu's wet nurse took away the cheese that was originally given to Xiren, and then took the tofu skin buns on her own initiative. Baoyu lost his temper.

Later generations criticized Baoyu for forgetting the man who dug the well. Baoyu was in adolescence, and his performance in front of girls was the main conflict, and other things could not be taken care of for the time being.

Tofu skin is rich in protein and contains calcium, iron and other minerals. Traditional Chinese medicine believes that it can relieve cough, clear away heat and nourish the stomach.

Tofu skin is very common in various parts of the country. Tofu skin buns are made by wrapping tofu skin with golden needles, fungus, green vegetables, shiitake mushrooms, or pork, chicken, shrimp, and steamed with oil, salt, shredded ginger, sugar, and sesame oil.

Soak the tofu skin in water until soft, cut into squares, soak the mushrooms and dried shrimps until soft, shred the mushrooms, fungus, bamboo shoots, chop the celery and coriander into fine pieces, add the seasonings, stir-fry until cooked, scoop up and mix with the chicken breasts

good.

Flatten the tofu skin, put the fillings one by one, wrap it up, tie it tightly with silk thread, or glue it with other things, put it in the steamer and it will be cooked in a quarter of an hour.

There are several ways for Han Peacock to obtain this manuscript. The one above is the simplest, and there are several others. One is to wrap the filling with tofu skin, such as folding the paper bag in four, forming a square bag, and using egg white paste.

Seal it and steam it in a basket.

Then the tofu skin is cut into small pieces, stuffed into a bag, closed with twine, steamed and shaped, and then the twine is removed. The tofu is also chopped into small pieces, mixed with condiments as the stuffing, wrapped in noodles, and steamed.

Tofu skin buns were a tribute in the Qing Dynasty. There are records of this item in the imperial food archives of the Qing Dynasty, and the production method obtained by Han Peacock was even more sophisticated than the tributes in the Qing palace.

The filling of tofu skin buns is also very particular. Generally, the special tofu skin is washed with clean water, soaked in boiling water, softened and cut into thin strips about 3 cm long, and then the washed enoki mushrooms are added.

Cut into small pieces, cut the black fungus into shreds after it is cooked, and add a little minced shiitake mushrooms to enhance the flavor.

Blanch the rapeseed in boiling water, cool it in cold water, chop it into pieces, mix all the above ingredients evenly, pour onion, pepper oil and sesame oil, then add a little salt, monosodium glutamate, chicken powder and sugar, and finally add minced chives and ginger

Mix well, add the skin of fermented dough or semi-hot dough, fold it up and wrap it into a chrysanthemum-shaped round bun.

These processes are more or less spread now, but the material selection part can no longer be completed.

At that time, the tributes and ingredients in the palace were all specially provided, but now this aspect is exactly its shortcoming.

Everything used in the palace must be the best, so the soybeans used to make tofu skin are also the best. But now, the soybeans used for offerings are almost impossible to find.

The diet of the Qing Palace was managed by the Ministry of Internal Affairs and the Guanglu Temple. There were strict regulations on the chickens, ducks, cattle, sheep and vegetables supplied by various provinces. Generally, only the best and most famous in the country would be listed as tributes.

As long as modern food does not poison people, it is not easy to choose such good ingredients. Han Kongque made several experiments using the recipes in the Dream of Red Mansions manuscript, but the results were not good.

It was okay at the beginning, he mainly made meat products, and the selection of ingredients was not difficult. Although the ingredients can affect the deliciousness of the food, it is not that great.

When it comes to using soybeans to make tofu skin, ordinary soybeans will not work. Although the result is much better than the tofu skin sold outside, it is still not as delicious as the description in the manuscript.

In the end, Han Kongque could only carefully select soybeans according to the selection method provided in the recipe, but he found a lot of so-called organic soybeans or soybeans with various other names, but none of them were ideal.

After several unsuccessful experiments, Han Kongque did not give up. Instead, he found more soybeans for experiments to see if there was any difference in the soy juice made from these soybeans.

Because the soybeans needed to be soaked, one time there was no water around Han Kongque, so he thought of a lazy way to directly control the small flag hanging around his neck and release the water absorbed in the flag for soaking.

Got soybeans.

Unexpectedly, the soybeans soaked this time and the bean juice made were obviously better than the original one. The tofu skin made with this soybean completely reached the level recorded in the book, especially the texture of the tofu skin.

, it can’t be said to melt in your mouth, but it doesn’t have the rough feeling of ordinary tofu skin at all.

We must know that the tofu skin we often eat, if we simply eat the tofu skin, after chewing it, we will find it difficult to swallow. This is mainly due to the problem of bean dregs.

But in the hand-written Red Mansion book, it is clearly recorded that the tofu skin used to make tofu skin buns is smooth and refreshing, and ordinary tofu skin cannot reach this level.

It was because of this that Han Kongque knew how special the materials in the hand-written Red Mansion were. It was also because he knew the huge difference between the original materials and the current materials that he spent a lot of effort to find the right one.

Soybeans are used to make royal tofu skin.

Han Kongque could not figure out why the soaked soybeans would change if he used Xuanyuan to control the water in the water flag, so he sent the soybeans to a specialized food testing agency for testing.

The test result is that the quality is the best. The soybeans soaked by the water in the Xuanyuan Control Water Flag are still the same as the original soybeans, but they have become the highest quality soybeans.

Except for the small amount of pesticides and metal residues in soybeans, other aspects of soybeans have completely reached the top level among beans.

Such soybeans are completely comparable to the special soybeans supplied during the Qing Dynasty. Such soybeans are unique in today's large-scale agriculture.
